Rows of apple trees run in a grid across the slope, pruned low and open so the fruit stays within reach and the light gets to the center of every tree. There are more varieties here than you'll find in any grocery store — heirlooms kept in cultivation because someone thought they were worth saving, some of them grown in this country for two hundred years and never sold commercially. What comes off the trees goes to the kitchens and the cider press, and whatever drops gets carried down to the pigs.
